In the heart of the Marais, in the 3rd arrondissement of Paris, our vision of Parisian hospitality takes shape in a five-star hotel. Every space, designed by Tristan Auer, tells the story of an imaginary traveller — curious and a collector — blending elegance with timeless heritage. Across 43 rooms and suites, a cocktail bar, a spa and Temple & Chapon, a grand restaurant led by chef Mélanie Serre, the venue offers a complete experience, balancing refinement and character.

A hotel steeped in history dating back to the French Revolution. At the centre of Paris'  2nd arrondisement,  near Opéra Garnier, an address with everything at your fingertips. Inside, 50 rooms designed by Dorothée Meilichzon echo the building’s history. Downstairs, chef Giovanni Passerini’s courtyard restaurant is the prelude to rooftop cocktails.

Tucked away in South Pigalle, a neighbourhood where artists and poets once roamed. Now dotted with cafés and wine bars, at the foot of Montmartre with balcony views of Sacré Coeur. A vision of Dorothée Meilichzon where 37 rooms unfold, a nod to history and elegance. Downstairs, chef Gregory Marchand’s Frenchie Pigalle is an invitation to indulge.

A bolthole in the heart of Covent Garden, the soul of Central London. On our doorstep, the infinite choice of discovery, from theatres, galleries and museums, to restaurants, bars and shops. Tucked away in our small hotel, our very own Henri with beloved chef Jackson Boxer at the helm. A drink at the bar awaits, as you watch the world pass by.

On the shores of the Giudecca Canal emerges Il Palazzo Experimental. A mirage against the glittering water, a romantic escape in the heart of Venice. 32 elegant hotel rooms and suites, with postcard views cast over canals and our private garden. Chef Greg Marchand weaves elegance with global cuisine, serving sweet bread nuggets, iconic bacon scones and a legendary banoffee to finish. A meal best enjoyed overlooking Parisian streets, a glimpse of Montmartre and Sacré-Coeur just beyond.

On the ground floor tucked away from the Grands Boulevards, a restaurant beneath a towering glass roof to discover. A menu conceived by beloved chef of the new Parisian gastronomic scene, Giovanni Passerini revisits the great classics of French-Italian country cooking with fine-dining tendencies. Guests are seated in a landscaped courtyard with a bar at the heart. In warmer months, the roof retracts for a meal enjoyed in the gentle summer breeze.

Behind the wooden door at 14-15 Henrietta Street, a restaurant unfolds. A tribute to the classic French bistro, interpreted by British chef Jackson Boxer. Each meal, a choreographed performance across herringbone floors, serving beautiful dishes onto tables clothed in white, as candlelight flickers and laughter drifts from table to table.

Just downstairs, a Venetian restaurant reminiscent of an Italian film, where locals and travellers linger over a meal. Chef Denis Begiqi is at the helm, offering a playful take on Italian fare, a romantic twist of fate. An impressive dining room awaits, awash with marble touches, soft greens and rich red stripes, right in the heart of Dorsoduro.

Off the beaten track, a beachside restaurant overlooks the sea. On the coast of Comporta, a restaurant emerges from the white sand dunes as if a mirage. Beneath blue skies and the warmth of summer breeze, step through the doors of Elemento Atlantico, where renowned Brazilian chef Manu Buffara is at the helm.

The original wine bar in La Compagnie’s fold, first opened in 2011 as a tongue-in-cheek nod to natural wine. A place to learn about French wine, one that quickly became a local haunt and paved the way for sister wine bars in New York and London. Now each their own hidden gem with hundreds of references, tucked neatly away.

Due north in the heart of Flatiron, the second iteration of our Manhattan wine bar and sister to the original La Compagie’s first in Paris, and then London. Hidden on a quiet street just above Experimental Cocktail Club. A place where evenings are spent over rare wines and a menu of interesting flavours by chef partner Eric Bolyard.

A vision of New York reimagined on Parisian streets. Each night, cocktails at the American Bar are a reminder of the Big Apple. The shimmer of crystal glasses and low-slung seats, sipping chilled martinis through conversation, nights tucked away at the hotel bar. The first chapter of our story, a cocktail bar inspired by New York’s iconic speakeasies. A cosy bar that speaks volumes, telling tales of Paris’ cocktail renaissance that began in 2007 with a distinctly French touch. A genuine landmark in the 2nd arrondissement for cocktail lovers, a place where the Experimental journey laid its first roots.

Beyond the doors, draped fabrics and velvet sofas tucked away in discreet corners, a bar hidden away from plain sight. Late night revelry ensues as the DJ plays, a celestial cocktail journey of otherworldly flavours beckons.

As winter descends on London, a Christmas treat returns but once a year. Behind the doors of Miracle at Henrietta, Santa’s elves head south to the heart of Covent Garden every November to debut a veritable tribute to Christmas cheer. Twinkling lights and tinsel, the scent of balsam fir, and most importantly, a menu filled with over-the-top cocktails.

Perched above Chinatown, overlooking the streets below. A cocktail bar plucked from the 1920s, a cinematic vision of designer Dorothée Meilichzon. The perfect place for evening cocktails as the sun slips beneath horizon and inky skies reveal starry nights. The cocktail menu is a mix of Experimental classics and twists inspired by Balearic flavours.

Tucked away on a gently sloping beach, just at the end of the iconic La Croisette, Bijou Plage Experimental is an institution in Cannes. Open year round, the iconic bolthole is a collaboration with chef Olivier Gaïatto (Le Safranier). A celebration of the Riviera’s vibrant flavours and colours, a menu the echoes seasonality and local products.

Opened in 1971 and founded by Serafino and Giuseppe Berardi, a nightclub that has spanned decades where once upon a time, Diana Ross and David Bowie graced the dance floor.
