The roots of Experimental, brought to life beneath a towering glass ceiling. A step back in time to the decadence of the Belle Epoque, cocktails served with an air of sophistication and a touch of elegance. The menu embraces Experimental signatures and nods to the classics, each sipped in the intimacy of a small lounge tucked away. The perfect place to begin and end an evening in Biarritz.

The Pace of Biarritz, Served Daily

Experimental’s original passion, the cocktail menu introduces you to a list of cocktails to linger over. Egarri Naiz is a blend of Clementine de corse Brana, Patxaran Egiazki, Del Professore white vermouth and jasmine, and Citrus Time, a balanced mix of Acrobate gin, pomelo cordial, Timut pepper, thyme and yuzu.

A snack menu to accompany, an invitation to share. Settle in and enjoy Frenchie’s signature bacon scones or gougères with Tomme de brebis, ham croquettes, fish ceviche, Club sandwiches and charcuterie boards that explore the Basque region.

A journey that started in Paris, in the summer of 2007. A bar on a quiet street, the start of Paris’ cocktail renaissance.
